Ingredients:
- 1 cup / 90g rolled oats
- 2 cups / 480ml vegetable broth
- 1 can / 400g / 14oz white beans (cannellini), drained and rinsed
- 2 large handfuls / 60g / 2oz baby spinach
- 2 cloves garlic, minced
- 1/2 medium onion, finely diced
- 1 tablespoon / 15ml extra virgin olive oil
- 1/2 teaspoon ground turmeric
- Pinch of black pepper
- Pinch of sea salt
- Squeeze of lemon to finish
Toppings:
- 1 tablespoon / 8g pumpkin seeds per serving
- Nutritional yeast (optional)
- Chilli flakes (optional)
Method:
- Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.
- Add the garlic, turmeric, and black pepper. Stir for 30 seconds until fragrant.
- Add the rolled oats and vegetable broth. Stir to combine.
- Bring to a gentle simmer and cook for 5 to 7 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the broth.
- Stir in the white beans and cook for another 2 minutes until warmed through.
- Add the baby spinach and stir until just wilted, about 1 minute.
- Season with salt and a squeeze of lemon.
- Serve topped with pumpkin seeds, a sprinkle of nutritional yeast if desired, and chilli flakes for a little heat.
