Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 2-3 tbsp tahini (or any nut/seed butter)
- 1-2 tbsp lemon juice (or whatever citrus you have)
- Salt to taste
- Optional: garlic powder, cumin, paprika, or whatever spices you can manage
Instructions:
- Open the can of chickpeas and drain (don't worry about rinsing if you're too tired).
- Pour chickpeas into a bowl and mash with a fork until you reach your desired consistency—chunky is perfectly fine!
- Stir in tahini and lemon juice until creamy.
- Add salt and any spices you have energy for.
- Eat immediately or store in the fridge for up to 3 days.
Serving Ideas:
- Eat straight from the bowl with a spoon
- Spread on crackers or toast
- Stuff into pita bread with whatever greens you have
- Top with hemp seeds, sprouts, or avocado if you have them
