Ingredients:
- 3/4 cup coconut yogurt (unsweetened)
- 1/2 cup coconut milk (canned, full-fat)
- 1/2 ripe banana
- 1 tablespoon ground flaxseeds (reduce to 1 teaspoon or omit if very sensitive)
- 1/2 teaspoon fresh ginger (grated) or 1/4 teaspoon ground ginger
- 1 tablespoon blueberries
- 1 medjool date
- 1/4 teaspoon vanilla extract
- 1 tablespoon smooth sunflower seed butter (or almond butter)
- Pinch of sea salt
Toppings:
- 1/2 banana, sliced
- 1 teaspoon smooth nut/seed butter (thinned with a little coconut milk)
- Chia seeds
- Blueberries, handful
Instructions:
- In a blender, combine coconut yogurt, coconut milk, banana, flaxseeds (if using), ginger, blueberries, date, vanilla, nut butter, and sea salt.
- Blend until completely smooth and creamy.
- Pour into a bowl and top with sliced banana, fresh blueberries, thinned nut butter, and chia seeds.
- Serve immediately and eat slowly to support gentle digestion.
Gastroparesis Note: Start with half portions to test tolerance. If you have a very sensitive stomach, omit the flaxseeds and chia seeds initially and add them back gradually as your digestion improves.
