Ingredients:
For the Omelet:
- 1/2 cup chickpea flour (besan/gram flour)
- 1/2 cup water
- 1/4 tsp turmeric powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- 1 tbsp olive oil or avocado oil
For the Filling:
- 1/4 cup bell pepper, diced
- 1/4 cup mushrooms, sliced
- 2 tbsp red onion, diced
- 1 cup fresh spinach
- 1/4 avocado, sliced
- 1 tbsp fresh chives, chopped
- 1 tbsp fresh parsley, chopped
Instructions:

In a bowl, whisk together chickpea flour, water, turmeric, garlic powder, onion powder, salt, and pepper until smooth. Let sit for 2-3 minutes to thicken slightly.

Heat 1/2 tablespoon oil in a non-stick pan over medium heat. Sauté bell pepper, mushrooms, and onion for 2-3 minutes until softened. Add spinach and cook until wilted. Remove from pan and set aside.
- Heat remaining oil in the same pan over medium heat. Pour in the chickpea batter, tilting the pan to spread evenly. Cook for 2-3 minutes until the bottom is set and lightly golden.

Spoon the sautéed vegetables onto one half of the omelet. Add avocado slices and fresh herbs.
- Using a spatula, carefully fold the omelet in half. Slide onto a plate and garnish with additional fresh herbs.
