Ingredients:
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or oat milk)
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- 2 tablespoons date paste (see instructions below)
- 1/2 teaspoon vanilla extract
- Pinch of black pepper (enhances turmeric absorption)
Toppings:
- 1/2 cup fresh blueberries
- 1/4 cup chopped walnuts
- Extra cinnamon for sprinkling
Instructions:
To make date paste:
- Soak 6-8 pitted Medjool dates in warm water for 10 minutes until softened.
- Drain and blend with 2-3 tablespoons of the soaking water until smooth and creamy.
For the pudding:

In a bowl, whisk together almond milk, turmeric, ginger, cinnamon, date paste, vanilla, and black pepper until well combined.

Add chia seeds and whisk vigorously for 2 minutes to prevent clumping.

Let sit for 5 minutes, then whisk again to break up any remaining clumps.

Cover and refrigerate for at least 2 hours or overnight until thick and pudding-like.

Before serving, stir the pudding and divide between two bowls.
- Top with fresh blueberries, chopped walnuts, and a sprinkle of cinnamon.
