Ingredients:
- 14 oz (400g) firm or extra-firm tofu, drained and pressed
- 2 tbsp olive oil or avocado oil
- 1/2 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup fresh spinach, chopped
- 1/2 cup mushrooms, sliced
For the Golden Seasoning:
- 1 tsp turmeric powder
- 2 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 1/2 tsp sea salt (or to taste)
Fresh Herbs:
- 2 tbsp fresh chives, chopped
- 1 tbsp fresh parsley, chopped
Instructions:

Crumble the pressed tofu into bite-sized pieces using your hands or a fork.

In a small bowl, mix together turmeric, nutritional yeast, garlic powder, onion powder, smoked paprika, black pepper, and salt.

Heat oil in a large skillet over medium heat. Add onion and bell pepper, cooking for 3-4 minutes until softened. Add garlic and mushrooms, cooking for another 2 minutes.

Add crumbled tofu to the skillet and sprinkle with the seasoning blend. Stir gently to coat evenly and cook for 3-4 minutes, allowing some pieces to get lightly golden.

Add spinach and cook for 1-2 minutes until wilted. Remove from heat and stir in fresh herbs.
- Taste and adjust seasoning as needed. Serve hot with toast, avocado, or fresh fruit.
