- 3 cups vegetable broth
- 2 cups frozen mixed vegetables
- 2 large handfuls fresh spinach (or 1 cup frozen)
- 3-4 tbsp nutritional yeast
- 1 tsp garlic powder (optional)
- Salt and pepper to taste
- 1-2 tbsp olive oil (optional, for richness)
Instructions:
- Pour vegetable broth into a large pot and bring to a boil.
- Add pasta and frozen mixed vegetables to the boiling broth.
- Cook according to pasta package directions (usually 8-12 minutes), stirring occasionally.
- In the last minute of cooking, stir in spinach and garlic powder (if using).
- Once pasta is tender and spinach is wilted, remove from heat.
- Stir in nutritional yeast, salt, pepper, and olive oil if desired.
- Let sit for 2-3 minutes to allow any remaining liquid to absorb.
