Ingredients:
- 1 can (400g) black beans, drained and rinsed
- 1 large ripe mango, diced
- 1 large ripe avocado, diced
- 1/2 red onion, finely diced
- 1 small red capsicum (bell pepper), diced
- Large handful of fresh coriander (cilantro), roughly chopped
- 1 long red chilli, deseeded and finely sliced (optional)
Dressing:
- Juice of 2 limes
- 1 tablespoon extra virgin olive oil
- 1 small clove garlic, minced
- Pinch of sea salt
- Pinch of ground cumin
Method:
- Whisk the lime juice, olive oil, garlic, salt, and cumin together in a small bowl.
- Combine the black beans, mango, avocado, red onion, capsicum, and chilli (if using) in a large bowl.
- Pour the dressing over and toss gently.
- Scatter the fresh coriander on top.
- Serve immediately or refrigerate for 20 minutes to let the flavours come together.
