Serves: 1
Prep time: 5 minutes (or 5 minutes the night before for overnight version)
Cook time: 8 minutes (stovetop) or none (overnight)
Ingredients:
- ¼ cup rolled oats (not instant)
- ¼ cup millet flakes
- 1 cup unsweetened oat milk or coconut milk
- 1 tablespoon ground flaxseed
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
- ½ teaspoon Ceylon cinnamon
- ¼ teaspoon ground cardamom
- Tiny pinch of ground turmeric
- Pinch of sea salt
Toppings
- 1 tablespoon tahini (or almond butter)
- A small handful of pistachios, roughly chopped
- ¼ cup fresh or frozen blueberries
- 1 tablespoon pomegranate seeds
- A few pumpkin seeds
- A light drizzle of date syrup only if needed (the cardamom and cinnamon add a natural sweetness most people find is enough)
Stovetop Method:
- Combine the oats, millet flakes, milk, ground flaxseed, chia seeds, hemp seeds, cinnamon, cardamom, turmeric, and salt in a small saucepan.
- Bring to a gentle simmer over medium-low heat, stirring occasionally, for about 6-8 minutes until the grains are creamy and the chia has thickened everything up. Millet flakes cook slightly differently than oats — they break down into a silkier, almost creamy texture that makes the porridge feel more luxurious than standard oatmeal.
- Pour into a bowl and top with tahini, pistachios, blueberries, pomegranate seeds, and pumpkin seeds.
Overnight Method (Better for Blood Sugar):
- Combine the oats, millet flakes, milk, ground flaxseed, chia seeds, hemp seeds, cinnamon, cardamom, turmeric, and salt in a jar or container.
- Stir well, seal, and refrigerate overnight (or at least 4 hours).
- In the morning, stir and eat cold or warm gently on the stovetop or in the microwave for a minute or two.
- Top with tahini, pistachios, blueberries, pomegranate seeds, and pumpkin seeds.
