Serves 2 | Prep time: 5 minutes | Cook time: 15 minutes 

Ingredients:

  • 1 cup / 90g rolled oats
  • 2 cups / 480ml vegetable broth
  • 1 can / 400g / 14oz white beans (cannellini), drained and rinsed
  • 2 large handfuls / 60g / 2oz baby spinach
  • 2 cloves garlic, minced
  • 1/2 medium onion, finely diced
  • 1 tablespoon / 15ml extra virgin olive oil
  • 1/2 teaspoon ground turmeric
  • Pinch of black pepper
  • Pinch of sea salt
  • Squeeze of lemon to finish

Toppings:

  • 1 tablespoon / 8g pumpkin seeds per serving
  • Nutritional yeast (optional)
  • Chilli flakes (optional)

Method:

  1. Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.
  2. Add the garlic, turmeric, and black pepper. Stir for 30 seconds until fragrant.
  3. Add the rolled oats and vegetable broth. Stir to combine.
  4. Bring to a gentle simmer and cook for 5 to 7 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the broth.
  5. Stir in the white beans and cook for another 2 minutes until warmed through.
  6. Add the baby spinach and stir until just wilted, about 1 minute.
  7. Season with salt and a squeeze of lemon.
  8. Serve topped with pumpkin seeds, a sprinkle of nutritional yeast if desired, and chilli flakes for a little heat.
