Ingredients:
- ½ cup steel-cut oats
- 1 cup water (or plant-based milk for extra creaminess)
- 2 tbsp ground flaxseeds
- ½ sliced banana
- 1 small apple, stewed with cinnamon
- 2 medjool dates, chopped
- A small handful of walnuts
- A pinch of turmeric
- A pinch of cinnamon
Method:
- Cook your steel-cut oats in water or plant-based milk over medium heat, stirring occasionally, until thick and creamy (about 8-10 minutes).
- While the oats are cooking, dice your apple into small chunks and stew in a small saucepan with a splash of water and a generous pinch of cinnamon until soft (about 5 minutes).
- Stir the turmeric, the chopped medjool dates, and ground flaxseeds into the hot oats while they're still on the heat. The dates will soften and melt into the oats, creating these gorgeous little pockets of caramel-like sweetness.
- Spoon into a
bowl. Top with your stewed cinnamon apples, sliced banana, and a scattering of walnuts.
