The Gerobiotics Curry Vous lisez Blood Sugar-Steady Morning Porridge 3 minutes

Serves: 1
Prep time: 5 minutes (or 5 minutes the night before for overnight version)
Cook time: 8 minutes (stovetop) or none (overnight)

Ingredients:

  • ¼ cup rolled oats (not instant)
  • ¼ cup millet flakes
  • 1 cup unsweetened oat milk or coconut milk
  • 1 tablespoon ground flaxseed
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • ½ teaspoon Ceylon cinnamon
  • ¼ teaspoon ground cardamom
  • Tiny pinch of ground turmeric
  • Pinch of sea salt

Toppings

  • 1 tablespoon tahini (or almond butter)
  • A small handful of pistachios, roughly chopped
  • ¼ cup fresh or frozen blueberries
  • 1 tablespoon pomegranate seeds
  • A few pumpkin seeds
  • A light drizzle of date syrup only if needed (the cardamom and cinnamon add a natural sweetness most people find is enough)

Stovetop Method:

  1. Combine the oats, millet flakes, milk, ground flaxseed, chia seeds, hemp seeds, cinnamon, cardamom, turmeric, and salt in a small saucepan.
  2. Bring to a gentle simmer over medium-low heat, stirring occasionally, for about 6-8 minutes until the grains are creamy and the chia has thickened everything up. Millet flakes cook slightly differently than oats — they break down into a silkier, almost creamy texture that makes the porridge feel more luxurious than standard oatmeal.
  3. Pour into a bowl and top with tahini, pistachios, blueberries, pomegranate seeds, and pumpkin seeds.

Overnight Method (Better for Blood Sugar):

  1. Combine the oats, millet flakes, milk, ground flaxseed, chia seeds, hemp seeds, cinnamon, cardamom, turmeric, and salt in a jar or container.
  2. Stir well, seal, and refrigerate overnight (or at least 4 hours).
  3. In the morning, stir and eat cold or warm gently on the stovetop or in the microwave for a minute or two.
  4. Top with tahini, pistachios, blueberries, pomegranate seeds, and pumpkin seeds.
